Campus Canteen, Back of house tour

Ten students were given a guided tour of the kitchen on the first floor of Campus Dinning Centre on 22 April 2017, an open communication with canteen staff has helped students to understand kitchen operation and management.

 The visitors, wearing white scrubs and hats, were led by the canteen staff to visit the food processing area, cooking area, Chinese and western dessert making area, rice cooking line and tableware washing and disinfecting lines.

The students spoke highly of the scientific management system and advanced equipment. All measures to ensure food safety was introduced, eg: pesticides residue test, dish sample storage for further test, sampling inspection, external food test.  Students were impressed by the management system and detail oriented concept. Some minor questions regarding various dining experience was answered by the canteen staff. Those students now have better understanding of the canteen operation at the international campus.
